In response to the enthusiastic reception for her Ladies, a Plate, Alexa Johnston has gathered another tempting selection of traditional home-baking recipes. This collection has many more old favourites, like Sponge Kisses, Melting Moments and Cream Lilies, as well as a few savoury treats.

Having seen the first book, Ladies a Plate, I was very interested to see the next book. My mother wasn't much for baking, but when I arrived in NZ from the US many years ago, everyone made their own cakes. My mother-in-law always had at least 3 kinds of cakes, biscuits (cookies) or slices on hand. "Bought biscuits" were expensive and nowhere near as good as the home baked goods. I learned from the kinds of local books, and the basic Edmonds Cookbook, that Alexa Johnston discusses and shows photos of, and the hand written recipes from my friends and newly acquired in-laws. I loved her mention of so many places and people that I recognize, and also all the wonderful recipes she gives. Hokey pokey biscuits are still a staple and have to be mailed off to sons when they are overseas. Hokey pokey candy was 'homework' for my science class that was guaranteed to get done (and eaten!)- the two sorts of lava from a volcano, liquid basalt when it had boiled, then pumice foam when you put in the baking soda. Yet there were some recipes I'd never tried and just had to get baking after reading the book.The stories that go with the recipes are lovely, such as the one about Sir Edmund Hillary, the bake sales, Plunket raising money to help young mothers (me included) when they brought their new babies home.
Many Americans will probably be horrified at the amount of butter used, but margarine will substitute, changing the flavour a bit. Measurements may be a problem in the US. If in doubt, there are conversions on the internet that give English, American, and metric conversions, but most Kiwis operated, as I did and still do, with one of the funnel shaped measuring cups on page 8 - marked in most basic ingredients so you automatically get the correct weight by filling the cup up to the appropriate line for flour, sugar, icing sugar, cornflour, coconut, raisins etc. Otherwise, a cheap scale is good.
For anyone fancying a proper afternoon tea, this book is great.
